1½ cups fresh cara cara juice, 4-6 fruits
½ cup cherries, pitted
¼ cup sugar
¼ cup water
2 cups sparkling water or sparkling wine
¼ cup vodka (optional)
Fresh cara cara slices, cherries, and mint for garnish
Place cherries and water in a food processor. Blitz to puree. Add puree to medium saucepan with sugar. Cook over medium heat and reduce to a syrup, stirring frequently. Remove any solids with a mesh strainer. Cool syrup.
Add cara cara juice and cherry syrup to a pitcher. Stir to combine.
Fill glasses with ice and a cara cara slice. Fill the glass halfway with juice mixture. Add sparkling liquid and then ½ ounce of vodka (optional).
Garnish with fresh cherry and mint.
