Salad Ingredients

2 Cara Cara oranges
5 oz. bag arugula
½ avocado, chopped
2 oz. feta cheese, crumbled
1 oz. shelled pistachios
¼ cup golden raisins or other dried fruit

Dressing Ingredients

Juice of 1 Cara Cara orange
¼ cup apple cider vinegar
2 T. olive oil
1 tsp. Dijon mustard
Pinch of salt and black pepper


Segment and cut Cara Cara oranges into small pieces. Combine oranges with the remaining salad ingredients in a large bowl. Mix dressing ingredients in a separate bowl and dress right before serving.
