3 mandarins, peeled and segmented

2 cups shredded napa or green cabbage

2 cups shredded red cabbage

¼ cup toasted cashews

2 tbsp. sesame seeds

2 tbsp. chopped fresh cilantro

8 oz. grilled chicken, sliced

1 tbsp. sesame oil

¼ cup soy sauce

Juice of 1 orange or 3 mandarins

Salt and pepper to taste

2 handfuls crunchy ramen noodles


Add cabbage to a large bowl and massage with sesame oil to help soften it. Pour over soy sauce and juice of orange over and toss. Add remaining ingredients and season with salt and pepper to taste.
