Citrus-soy Marinated Chicken Skewers

2.5 lbs chicken breasts cut into bite-sized pieces
2 cups Navel Orange juice
1 tsp fresh ginger
1 cup organic soy sauce
1 tsp garlic powder
12 skewers 12 inches long
2 large red bell peppers, cut into 1 inch squares
2 cups rice cooked
Herbs, for garnish (optional)

Combine marinade ingredients with chicken pieces. Let sit for several hours, up to overnight. After marinated, discard marinade and thread chicken pieces onto skewers with bell peppers. Heat and oiled grill over medium heat and grill skewers about 10 minutes total, turning every few minutes, until chicken is firm and cooked through. Serve over rice and garnish with herbs such as mint or cilantro.
