Yields: 4 Serving


4 sweet potatoes
3 T butter
½ tsp. Cinnamon
½ tsp. Ground ginger
⅛ tsp. Nutmeg
3 T. brown sugar
Juice and zest of 1 orange
1 ¼ cups coconut milk


Bake sweet potatoes or steam in the microwave, turning every few minutes, until tender. Allow to cool slightly and scoop out flesh into a bowl. Add butter, spices, sugar, and zest and juice of 1 orange. With a mixer on low, gradually mix in coconut milk until the potatoes reached the desired consistency.
