Cara Cara Chia Jam:
3 lbs. or 5 medium Cara Cara oranges
3 Tablespoons maple syrup
3 Tablespoons white chia seeds (regular will work too)
Fresh ciabatta or french baguette bread
4 T. butter, melted
8 oz. goat cheese
½ cup Cara Cara Chia Jam
Honey, for drizzling
Cara Cara jam: Peel Cara Cara oranges and combine in a blender with maple syrup. Puree until smooth, then add to a saucepan with chia seeds. Bring to a boil, watching that it does not boil over, then reduce to a simmer and cook for 20-25 minutes until it thickens. Let cool and pour into a jar. Store in the refrigerator.
Crostini: Slice baguette and brush with melted butter. Toast in the oven at 400 degrees F about 5 minutes per side, until golden but still soft. Let cool and spread with softened goat cheese. Top with chia jam, drizzle with honey, sprinkle with basil, flaky sea salt and serve.
