½ cup full-fat canned coconut milk
1 ½ cups unsweetened almond milk
2 grapefruits
7 Tablespoons chia seeds
1 tsp. freshly grated ginger
1 tsp. Vanilla extract
2 T. maple syrup or honey
Granola, golden raisins, sliced almonds for topping


Combine coconut milk, almond milk, and the juice of 1 grapefruit and whisk in chia seeds. Add ginger, vanilla, and maple syrup and continue to whisk to evenly distribute chia seeds. Let sit for at least 1 hour up to overnight, stirring occasionally if possible, until pudding thickens. To serve, layer pudding with segments of remaining grapefruit and top as desired.
