Grapefruit Apricot Energy Bites

8 ounces dried apricots
1 cup old-fashioned oats
1/4 cup finely shredded unsweetened coconut (plus more for rolling)
1 tablespoon chia seeds or basil seeds
1 tablespoon ground flax
Zest of 1 grapefruit
1/2 grapefruit, juiced
1/4 cup raw cashew butter
Pinch salt

Blend apricots first until finely ground. Add remaining ingredients and blend until combined. Roll approximately 1 Tablespoon of the mixture into balls and roll in shredded coconut, pressing lightly to help it stick.
