2 lbs. cooked lobster

¼ cup avocado mayo

Juice and zest of 1 Cara Cara orange

1 Cara Cara orange, segmented and cut into small pieces

Juice of 1 lemon

½ bulb of fennel, chopped finely

1 tbsp. chopped tarragon 

2 tbsp. chopped chives

1 tbsp. rice vinegar

Salt and pepper, to taste

Seafood seasoning of choice or combination of garlic powder, celery seed, paprika and onion powder

Brioche hotdog buns, buttered and toasted


Mix together all ingredients except for lobster and buns. Season to taste and add lobster. Toss to coat and let sit to marinate for at least an hour, up to overnight. When ready to serve, butter and toast hot dog buns. Let cool and add lobster mixture. Enjoy!
