2 cups fresh South African orange juice (6-8 fruits)
2 cups South African Cara Cara juice (7-9 fruits)
Zest of one South African orange
½ cup sugar
Pomegranate arils & Mint for garnish
Add juices and sugar to a medium saucepan. Bring to a boil over medium heat, stirring frequently to dissolve sugar. Remove from heat and add zest.
Pour liquid into a baking dish with at least a 2” rim. Freeze for at least 3 hours, scraping the outside edges every 30 minutes with a fork to obtain a flaky consistency.
Top the granita with pomegranate arils and fresh mint just before serving.
