Ingredients:
1/2 cup butter, softened
1 cup brown sugar
2 large eggs
1/4 Greek Yogurt
1/2 cup Midknights orange juice
1 tablespoon grated orange zest
2 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
1 Tsp. Cinnamon
1/2 Tsp. All Spice
For the Topping-
1 Cup Flour
6 Tbsp. Cubed Butter
1/2 Cup Brown Sugar
1/2 Tsp. Cinnamon
Pinch of Salt
Directions:
Preheat oven to 350 degrees.
Cream together butter and brown sugar until well combined.
Add in eggs and mix again until smooth.
Add in greek yogurt and orange juice and continue to mix until smooth about 3-5 minutes.
Mix together flour, baking powder, salt, cinnamon, all spice, and orange zest and whisk to combine.
Slowly add in dry ingredients to the wet ingredients until smooth.
Make the streusel topping by mixing together flour, cubed butter, brown sugar, cinnamon, and salt. Use your hands and mix together until the texture is like clumpy sand.
Pour the batter into a parchment lined 8×8 pan and then sprinkle the topping over top.
Bake for 25-30 minutes until the coffee cake is done.
